5x15 discussion on food waste. Tristram Stuart is an international award-winning author, speaker, campaigner and expert on the environmental and social impacts of food waste. His books have been described as "a genuinely revelatory contribution to the history of human ideas” (The Times) and his TED talk has been watched over a million times. The environmental campaigning organisation he founded, Feedback, has spread its work into dozens of countries worldwide to change society's attitude towards wasting food. He is also the founder of Toast Ale, a beer launched in the UK in 2016 that is made using fresh, surplus bread.

Dan Barber is the chef and co-owner of Blue Hill and Blue Hill at Stone Barns, and the author of The Third Plate (May 2014, The Penguin Press). A member of Stone Barns Center for Food and Agriculture's board of directors, Barber works to bring the principles of good farming directly to the table. Barber has received multiple James Beard awards, including Best Chef: New York City (2006) and the country's Outstanding Chef (2009); and he was appointed by Barack Obama to serve on the President’s Council on Physical Fitness, Sports and Nutrition from 2008 to 2016. In 2009 he was named one of Time magazine’s 100 most influential people in the world.
